For this chicken sausage recipe, you’ll need a meat grinder, mixing bowl, and sausage stuffer. A meat grinder is essential for grinding the chicken, and a sausage stuffer helps you easily stuff the casings. 

I’ve been using a LEM meat grinder for years, and it’s amazing. For stuffing, I have both a 5lb sausage stuffer. For chopping and prepping ingredients, a simple knife will do the job.

Finally, you’ll need a pan, air fryer, or oven as your main cooking tool to bring everything together perfectly.

  • 1/4 cup finely chopped shallots

  • 2 tablespoons red wine vinegar, chilled

  • 1 tablespoon freshly ground black pepper

  • 2 tablespoons finely chopped fresh oregano

  • 4 pounds skin-on, boneless chicken thighs, cubed

  • 2 tablespoons juice from 1 to 2 lemons, chilled

  • Natural hog casings, soaked in lukewarm water for at least 30 minutes and rinsed

Step 1: Roast the Garlic

Preheat the oven to 350°F (175°C). Slice off the top of each garlic head, drizzle with olive oil, and wrap in foil. Roast for about 15-20 minutes until the garlic is soft and browned. Cool, then squeeze the cloves into a bowl.
